- 2 chicken breasts
- 1 cup pesto sauce
- 1 package of tortellini (about 9 oz)
- 1 cup asparagus, chopped
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pan, heat the olive oil over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the pan. Cook for 5-7 minutes on each side until fully cooked through.
- Remove the chicken from the pan and set it aside on a plate.
- In the same pan, add the tortellini and cook according to the package directions until tender.
- Add the chopped asparagus and halved cherry tomatoes to the pan, cooking until the vegetables are tender, about 3-4 minutes.
- Return the cooked chicken to the pan and add the pesto sauce, stirring to combine all the ingredients.
- Cook for an additional 2-3 minutes to heat everything through, then serve warm.
Notes
For a creamier sauce, add a splash of heavy cream when mixing in the pesto. Use fresh ingredients for the best flavor.
