Description

A delightful one-pan meal featuring chicken, tortellini, and fresh vegetables, all tossed with pesto for a quick and satisfying dinner.


Ingredients

  • 2 chicken breasts
  • 1 cup pesto sauce
  • 1 package of tortellini (about 9 oz)
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the pan. Cook for 5-7 minutes on each side until fully cooked through.
  3. Remove the chicken from the pan and set it aside on a plate.
  4. In the same pan, add the tortellini and cook according to the package directions until tender.
  5. Add the chopped asparagus and halved cherry tomatoes to the pan, cooking until the vegetables are tender, about 3-4 minutes.
  6. Return the cooked chicken to the pan and add the pesto sauce, stirring to combine all the ingredients.
  7. Cook for an additional 2-3 minutes to heat everything through, then serve warm.

Notes

For a creamier sauce, add a splash of heavy cream when mixing in the pesto. Use fresh ingredients for the best flavor.
