Ingredients

  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent.
  2. Stir in the minced garlic and dried thyme, cooking for another minute.
  3. Add the orzo pasta and vegetable broth, bringing it to a boil.
  4. Reduce heat, cover, and simmer for about 10 minutes.
  5. Stir in the broccoli florets and continue to cook until the orzo is tender and the broccoli is bright green.
  6. Remove from heat, stir in the shredded cheddar cheese until melted, and season with salt and pepper.
