- 4 cups vegetable broth
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent.
- Stir in the minced garlic and dried thyme, cooking for another minute.
- Add the orzo pasta and vegetable broth, bringing it to a boil.
- Reduce heat, cover, and simmer for about 10 minutes.
- Stir in the broccoli florets and continue to cook until the orzo is tender and the broccoli is bright green.
- Remove from heat, stir in the shredded cheddar cheese until melted, and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
