- 1 lb chicken thighs, boneless and skinless
- 2 cups rice (long grain or basmati)
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tablespoons shawarma spice mix
- 1 can (14 oz) diced tomatoes
- 3 cups chicken broth
- Salt and pepper, to taste
- Olive oil, for cooking
- Yogurt, for serving (optional)
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until fragrant.
- Add the chicken thighs and sprinkle the shawarma spice mix over them. Cook until the chicken is browned.
- Stir in the rice, diced tomatoes, and chicken broth. Bring to a boil.
- Reduce the heat to low, cover the pot, and let simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and season with salt and pepper to taste.
- Serve the chicken shawarma rice with yogurt and garnish with parsley if desired.
