Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 2 cups rice (long grain or basmati)
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons shawarma spice mix
  • 1 can (14 oz) diced tomatoes
  • 3 cups chicken broth
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Yogurt, for serving (optional)
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until fragrant.
  2. Add the chicken thighs and sprinkle the shawarma spice mix over them. Cook until the chicken is browned.
  3. Stir in the rice, diced tomatoes, and chicken broth. Bring to a boil.
  4. Reduce the heat to low, cover the pot, and let simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
  5. Fluff the rice with a fork and season with salt and pepper to taste.
  6. Serve the chicken shawarma rice with yogurt and garnish with parsley if desired.
