- 2 cups rice
- 1 lb chicken thighs, cut into pieces
- 2 tablespoons shawarma spice mix
- 2 tablespoons olive oil
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Yogurt (for sauce)
- Fresh herbs (like parsley or cilantro, for garnish)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until softened.
- Add the chicken pieces and shawarma spice mix, and cook until the chicken is browned.
- Stir in the rice until it’s well-coated with the spices.
- Pour in the chicken broth and bring to a boil.
- Once boiling, reduce heat, cover, and let simmer for about 20 minutes or until the rice is cooked and has absorbed all the liquid.
- Remove from heat, fluff the rice with a fork, and serve topped with yogurt and fresh herbs.
Notes
For best results, do not skip the spices and choose long-grain rice for fluffiness.
