- 1 pound ground turkey
- 12 ounces penne or rotini pasta
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (including juices)
- 2 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup chopped spinach
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic; sauté until softened.
- Add the ground turkey, season with salt and pepper, and cook until browned.
- Stir in the diced tomatoes, chicken broth, Italian seasoning, and pasta. Bring to a boil.
- Reduce heat, cover, and let simmer for about 12-15 minutes, until the pasta is tender.
- Stir in chopped spinach and cook for an additional 2 minutes.
- Remove from heat, stir in the Parmesan cheese, and garnish with fresh basil before serving.
