Ingredients

  • 1 pound ground turkey
  • 12 ounces penne or rotini pasta
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (including juices)
  • 2 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup chopped spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic; sauté until softened.
  3. Add the ground turkey, season with salt and pepper, and cook until browned.
  4. Stir in the diced tomatoes, chicken broth, Italian seasoning, and pasta. Bring to a boil.
  5. Reduce heat, cover, and let simmer for about 12-15 minutes, until the pasta is tender.
  6. Stir in chopped spinach and cook for an additional 2 minutes.
  7. Remove from heat, stir in the Parmesan cheese, and garnish with fresh basil before serving.
