Description

A comforting, rich, and creamy potato soup inspired by Outback Steakhouse, perfect for family dinners and gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices of bacon, cooked and crumbled
  • 1 small onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives for garnish (optional)

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside, leaving some drippings in the pot.
  2. Sauté the chopped onion in the bacon drippings until translucent.
  3. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  4. Use a potato masher to mash some of the potatoes for a creamy consistency, while leaving some chunks for texture.
  5. Stir in the heavy cream, shredded cheddar cheese, and crumbled bacon.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chives if desired.

Notes

For a creamier texture, blend a portion of the soup before adding it back. Feel free to add vegetables for extra flavor.
