- 4 large potatoes, peeled and diced
- 1 cup sharp cheddar cheese, shredded
- 6 slices of bacon, cooked and crumbled
- 1 small onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives for garnish (optional)
Instructions
- In a large pot, cook the bacon until crispy. Remove and set aside, leaving some drippings in the pot.
- Sauté the chopped onion in the bacon drippings until translucent.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Use a potato masher to mash some of the potatoes for a creamy consistency, while leaving some chunks for texture.
- Stir in the heavy cream, shredded cheddar cheese, and crumbled bacon.
- Season with salt and pepper to taste.
- Serve hot, garnished with chives if desired.
Notes
For a creamier texture, blend a portion of the soup before adding it back. Feel free to add vegetables for extra flavor.
