Description

A delightful and convenient meal combining tender chicken breast, crispy potatoes, and fresh green beans, all cooked on a single sheet pan.


Ingredients

  • 1 1/2 lb chicken breast (about 34 pieces, approx. 1 inch thick)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/3 cup grated parmesan cheese
  • 1/3 cup breadcrumbs (Italian or plain)
  • 1/2 teaspoon cracked pepper
  • 1/23/4 teaspoon sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced (for potatoes)
  • 2 tablespoons olive oil (for potatoes)
  • 2 tablespoons grated parmesan cheese (for potatoes)
  • Salt and pepper to taste (for potatoes)
  • 1 lb fresh green beans, ends trimmed
  • 1 tablespoon olive oil (for green beans)
  • 1 garlic clove, minced (for green beans)
  • 1 tablespoon parmesan cheese (optional, for green beans)
  • Salt and pepper to taste (for green beans)

Instructions

  1. Preheat your oven to 425°F. Line a sheet pan with parchment paper or spray with cooking oil.
  2. Toss the red potatoes with 2 tablespoons olive oil, 1-2 minced garlic cloves, 2 tablespoons grated parmesan cheese, and season with salt and pepper. Coat evenly.
  3. Spread seasoned potatoes on one-third of the sheet pan. Bake for 10-15 minutes.
  4. While the potatoes bake, toss the chicken with 2 tablespoons olive oil, 2 minced garlic cloves, 1/3 cup grated parmesan, 1/3 cup breadcrumbs, 1/2 teaspoon cracked pepper, and 1/2 – 3/4 teaspoon sea salt in a medium bowl.
  5. After the potatoes have baked, add the chicken to the empty space on the sheet pan.
  6. In a separate bowl, combine the green beans with 1 tablespoon olive oil, 1 minced garlic clove, and 1 tablespoon parmesan cheese (if desired). Toss and season with salt and pepper.
  7. Add green beans to the sheet pan.
  8. Bake everything for an additional 25 minutes or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, broil on high for an additional 4-5 minutes.
  9. Allow to cool for a few minutes before serving.

Notes

Customize your veggies and use fresh herbs for added flavor. Ensure even cooking by cutting chicken pieces to a similar size.
