- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup crushed crackers (such as Ritz or saltines)
- 1/2 cup butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, shredded cheese, and frozen mixed vegetables. Mix well until everything is fully incorporated.
- Add the garlic powder, onion powder, salt, and pepper to taste. Stir until evenly distributed.
- Pour the chicken mixture into a greased 9×13-inch baking dish.
- In a separate bowl, mix the crushed crackers with the melted butter. Stir until the crackers are well-coated.
- Evenly sprinkle the cracker mixture over the top of the chicken mixture in the baking dish.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbling and the topping is golden brown.
- Once done, let it cool for a few minutes before serving to allow the layers to settle.
Notes
For a quicker option, use rotisserie chicken. Feel free to substitute mixed vegetables with your favorites or experiment with various cheeses.
