Description

A comforting chicken casserole featuring creamy soup, tender chicken, and mixed vegetables, perfect for family gatherings or weeknight meals.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup crushed crackers (such as Ritz or saltines)
  • 1/2 cup butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, shredded cheese, and frozen mixed vegetables. Mix well until everything is fully incorporated.
  3. Add the garlic powder, onion powder, salt, and pepper to taste. Stir until evenly distributed.
  4. Pour the chicken mixture into a greased 9×13-inch baking dish.
  5. In a separate bowl, mix the crushed crackers with the melted butter. Stir until the crackers are well-coated.
  6. Evenly sprinkle the cracker mixture over the top of the chicken mixture in the baking dish.
  7. Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbling and the topping is golden brown.
  8. Once done, let it cool for a few minutes before serving to allow the layers to settle.

Notes

For a quicker option, use rotisserie chicken. Feel free to substitute mixed vegetables with your favorites or experiment with various cheeses.
