Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, and salt.
  3. In another bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Mash the ripe bananas and fold them into the wet mixture.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for about 55 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool before slicing.

Notes

Use overripe bananas for best flavor. Avoid overmixing to keep the bread light.
