- 1 cup peanut butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup oats
- 1/2 cup all-purpose flour
- 1 teaspoon baking soda

- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine peanut butter, brown sugar, granulated sugar, egg, and vanilla extract until smooth.
- In another bowl, mix together oats, flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until well combined.
- Fold in chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the cookies are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store in an airtight container for up to a week or freeze for up to three months. For chewier cookies, consider adding an extra egg yolk.
