Description

A delightful blend of sweet pears, crunchy candied pecans, and zesty balsamic vinaigrette, this salad is perfect for any meal or as a satisfying main dish.


Ingredients

  • 4 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1 pinch sea salt
  • 1/2 tsp vanilla extract
  • 1 tbsp water
  • 1 cup pecans
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 garlic clove (minced)
  • 3/4 cup extra virgin olive oil
  • 10 oz baby spring mix
  • 1 pear (sliced)
  • 1 cup dried cherries
  • 1 cup candied pecans
  • 1/3 cup feta cheese
  • 1 cup balsamic vinaigrette

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine brown sugar, cinnamon, sea salt, vanilla extract, and water. Stir until mixed.
  3. Add pecans and toss until well coated.
  4. Spread pecans on a baking sheet lined with parchment paper and bake for 10-15 minutes until golden brown. Allow to cool.
  5. In a small bowl or jar, combine balsamic vinegar, honey, Dijon mustard, sea salt, black pepper, and minced garlic.
  6. Slowly drizzle in olive oil while whisking continuously until emulsified. Adjust seasonings if necessary.
  7. In a large salad bowl, place baby spring mix as the base, add sliced pear, dried cherries, candied pecans, and feta cheese.
  8. Drizzle balsamic vinaigrette over the salad before serving.

Notes

Use fresh ingredients for best flavor. Prepare candied pecans and vinaigrette ahead of time for convenience.
