- 24 ounces semi-sweet chocolate chips or chopped chocolate bars
- 1 tablespoon coconut oil or unsalted butter (optional)
- 1 cup unsalted butter, cut into pieces
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1/2 cup light corn syrup
- 1/2 teaspoon salt
- 1 teaspoon pure vanilla extract
- 3 cups pecan halves or large pieces, lightly toasted
Instructions
- Line two large baking sheets with parchment paper.
- Toast the pecans in a 350°F (175°C) oven for about 5-7 minutes until fragrant. Let cool.
- Melt the chocolate chips with coconut oil or butter in a microwave. Spread melted chocolate onto one baking sheet and chill until set.
- In a saucepan, combine butter, granulated sugar, brown sugar, corn syrup, and salt. Heat while stirring until boiling.
- Boil for 5-7 minutes, until thickened. Stir in vanilla and toasted pecans.
- Pour the mixture over the chocolate base and spread it evenly.
- Chill until firm, then break into pieces and store.
Notes
For best flavor, bring chilled bark to room temperature before serving.
