Ingredients

- 1.5 lbs beef sirloin, sliced into strips
- 2 bell peppers, sliced (any color)
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef strips and season with salt and pepper.
- Transfer the browned beef to the crock pot.
- Add bell peppers, onion, and garlic to the crock pot.
- In a bowl, mix beef broth, soy sauce, and cornstarch. Pour the mixture over the beef and vegetables.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot over rice or noodles.
