Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
  • 2 tablespoons melted coconut oil or olive oil
  • 3/4 teaspoon fine sea salt
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground chili powder (optional)
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon ground cumin (optional)
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and chop the sweet potatoes into 1/2-inch cubes.
  3. Transfer the sweet potatoes to a large baking sheet.

  6. Roast for a total of 27-35 minutes, flipping every 10-15 minutes until golden and tender.
