Ingredients

  • 1 lb Chicken Breast
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (Minced)
  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (Diced)
  • 1/4 cup Green Onions (Chopped)
  • Sesame seeds (For serving)
  • Crushed red pepper (Optional)

Instructions

  1. Heat oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds.
  2. Cut chicken into bite-sized pieces, add to the skillet, season with salt and pepper, and cook until browned, about 5-7 minutes.
  3. In a small bowl, combine soy sauce, pineapple juice, honey or brown sugar, vinegar, cornstarch, and water. Mix until cornstarch is dissolved.
  4. Pour sauce over cooked chicken, stirring to coat evenly.
  5. Add pineapple chunks and diced bell pepper; continue cooking for another 3-5 minutes.
  6. Serve over cooked rice, garnished with green onions and sesame seeds. Add crushed red pepper if desired.
