Description

A refreshing and tropical drink combining the sweetness of pineapple and the creaminess of coconut, perfect for any occasion.


Ingredients

Scale
  • Two 13.5 ounce cans full fat coconut cream
  • 1 teaspoon pure vanilla extract
  • 6 cups unsweetened pineapple juice, chilled
  • 1 cup fresh orange juice, chilled
  • 1/2 cup fresh lime juice, chilled
  • 1/2 cup simple syrup, or more to taste
  • 4 to 6 cups sparkling water, club soda, or lemon-lime soda, chilled
  • Plenty of ice for serving
  • Fresh pineapple wedges or spears for garnish
  • Maraschino cherries or fresh cranberries for garnish
  • Fresh mint sprigs for garnish
  • Toasted coconut flakes (optional for garnish)
  • Lime slices or wheels for garnish

Instructions

  1. Scoop all the coconut cream into a large punch bowl or pitcher. Add the vanilla extract and whisk until smooth.
  2. Slowly pour in the pineapple juice while whisking gently.
  3. Add the orange juice and lime juice, whisking until combined.
  4. Taste and gradually add simple syrup to reach desired sweetness.
  5. Cover and refrigerate for 1-2 hours if not serving immediately.
  6. Just before serving, stir in the chilled sparkling beverage.
  7. Serve over ice and garnish with pineapple, cherries, mint, coconut flakes, and lime.

Notes

For a sweeter punch, adjust the amount of simple syrup. Chill all ingredients beforehand for best results.
