A refreshing and tropical drink combining the sweetness of pineapple and the creaminess of coconut, perfect for any occasion.
Ingredients

- Two 13.5 ounce cans full fat coconut cream
- 1 teaspoon pure vanilla extract
- 6 cups unsweetened pineapple juice, chilled
- 1 cup fresh orange juice, chilled
- 1/2 cup fresh lime juice, chilled
- 1/2 cup simple syrup, or more to taste
- 4 to 6 cups sparkling water, club soda, or lemon-lime soda, chilled
- Plenty of ice for serving
- Fresh pineapple wedges or spears for garnish
- Maraschino cherries or fresh cranberries for garnish
- Fresh mint sprigs for garnish
- Toasted coconut flakes (optional for garnish)
- Lime slices or wheels for garnish
Instructions
- Scoop all the coconut cream into a large punch bowl or pitcher. Add the vanilla extract and whisk until smooth.
- Slowly pour in the pineapple juice while whisking gently.
- Add the orange juice and lime juice, whisking until combined.
- Taste and gradually add simple syrup to reach desired sweetness.
- Cover and refrigerate for 1-2 hours if not serving immediately.
- Just before serving, stir in the chilled sparkling beverage.
- Serve over ice and garnish with pineapple, cherries, mint, coconut flakes, and lime.
Notes
For a sweeter punch, adjust the amount of simple syrup. Chill all ingredients beforehand for best results.
