  • 1 cup fresh or canned pineapple, diced and well drained
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Whisk together brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger to create the glaze.
  3. Pat the salmon fillets dry, rub with olive oil, and season with salt and pepper.
  4. Place the seasoned salmon skin-side down in the baking dish.
  5. Spoon two-thirds of the glaze over the salmon and scatter diced pineapple around.
  6. Bake for 12 to 15 minutes until cooked through.
  7. Optionally, broil for 1 to 2 minutes for a caramelized finish.
  8. Let rest for 5 minutes, garnish with parsley, and serve warm.
