- 3 cups baby spinach
- 1/2 cup fresh blueberries
- 1 kiwi, peeled and sliced
- 1/2 large chicken breast, baked and sliced
- 1/8 cup pistachios
- 1 slice red onion, quartered
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 3 tablespoons balsamic vinegar
- 1 tablespoon minced red onion
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon pepper
Instructions
- Prepare the chicken by covering it in balsamic vinaigrette dressing and baking in a covered glass baking dish at 375°F for approximately 40 minutes.
- Wash the baby spinach thoroughly and lay it as the base in a large salad bowl.
- Slice the cooled chicken into bite-sized pieces and layer it on top of the spinach.
- Add the fresh blueberries, kiwi slices, quartered red onion, and pistachios over the chicken and spinach.
- Combine the sour cream, mayonnaise, balsamic vinegar, minced red onion, dried oregano, salt, sugar, and pepper in a separate bowl. Mix until smooth and creamy.
- Drizzle the creamy balsamic dressing over the salad just before serving, and toss gently to combine all the flavors.
Notes
For an extra crunch, consider toasting the pistachios lightly. Make the dressing ahead of time and store in the fridge.
