Description

A delicious Filipino treat featuring flaky pastry filled with sweet purple yam (ube). Perfect as a snack or dessert.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 6 tbsp vegetable oil
  • 1 tsp salt
  • 1 cup water
  • 1 medium-sized purple yam (ube)
  • Water for boiling
  • 1 cup sugar
  • 2 tbsp butter
  • 1 cup all-purpose flour (for the filling)
  • A bit of water (to help with consistency)
  • Sesame seeds (for topping)

Instructions

  1. Combine all the ingredients from Set A in a mixing bowl and mix until well combined.
  2. Knead the dough until soft and malleable, cover, and rest for 35 minutes.
  3. Boil the purple yam in water until soft, then mash until smooth.
  4. Mix sugar and 1 cup of flour into the mashed yam until just combined.
  5. Melt butter in a pan, add yam mixture, and cook until somewhat dry; set aside to cool.
  6. Shape cooled filling into approximately 20 small balls.
  7. Return dough to working area, roll into a log, and divide into two equal pieces.
  8. Roll each piece into 20 smaller portions and flatten each dough ball.
  9. Place an ube ball in the center and seal well, flatten gently.
  10. Brush tops with water, sprinkle with sesame seeds.
  11. Cook in a heated pan over low to medium heat, flipping until golden brown and crispy.

Notes

Use fresh ingredients for the best flavor and texture. Adjust dough consistency as needed. Optional flavor variations include adding shredded coconut or cocoa powder.
