  • 2 teaspoons active dry yeast

  • 4 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 2 tablespoons olive oil

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth, allowing to cool slightly.
  2. In a small bowl, mix warm water, yeast, and sugar. Let sit about 5-10 minutes until foamy.
  3. In a large bowl, combine mashed potatoes, yeast mixture, flour, salt, and olive oil. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 1 to 1.5 hours or until doubled in size.
  6. Once risen, punch the dough down and shape it into a loaf. Place in a greased loaf pan, cover, and let rise for another 30-45 minutes.
  7. Preheat oven to 375°F (190°C). Bake for 35-40 minutes until golden brown and sounds hollow when tapped.
  8. Let cool on a wire rack before slicing.
