- 1/4 cup cold butter, cubed
- 3/4 cup pumpkin puree
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together flour, sugar, baking powder, salt, cardamom, and cinnamon.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In another bowl, mix together pumpkin puree, milk, egg, and vanilla.
- Stir the wet ingredients into the dry until just combined.
- Turn the dough out onto a floured surface, patting it into a rectangle about 1-inch thick. Cut the dough into triangles or circles.
- Place on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden.
- Allow to cool slightly before serving.

Serve warm with butter, cream cheese, honey, or maple syrup. Store in an airtight container for up to 3 days, or freeze for up to 2 months.
