Description

Ingredients

  • 1/4 cup cold butter, cubed
  • 3/4 cup pumpkin puree
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, cardamom, and cinnamon.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, mix together pumpkin puree, milk, egg, and vanilla.
  5. Stir the wet ingredients into the dry until just combined.
  6. Turn the dough out onto a floured surface, patting it into a rectangle about 1-inch thick. Cut the dough into triangles or circles.
  7. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden.
  8. Allow to cool slightly before serving.
