- 1 cup pumpkin puree
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup graham cracker crumbs
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a mixing bowl, combine the cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth.
- Chill the mixture in the refrigerator for about 30 minutes.
- Once chilled, scoop out small balls of the mixture and roll them in your hands to form truffles.
- Roll the truffles in graham cracker crumbs to coat.
- Melt the white chocolate chips with coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each truffle into the melted chocolate, allowing the excess to drip off.
- Place the truffles on a parchment-lined baking sheet and chill again until set.
- Serve and enjoy for Halloween or Thanksgiving!
