Description

A warm, comforting pumpkin soup, perfect for chilly days that’s packed with flavor and nutrition.


Ingredients

  • 1 medium pumpkin
  • 1 onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 cup cream or coconut milk (optional)

Instructions

  1. Cut the pumpkin in half, remove the seeds, and roast in the oven until tender.
  2. In a pot, sauté chopped onion and garlic until soft.
  3. Scoop the flesh from the roasted pumpkin and add to the pot.
  4. Add vegetable broth and spices, then bring to a simmer.
  5. Use an immersion blender to puree the soup until smooth.
