Instructions
- In a large pot, heat olive oil over medium heat. Sauté the diced onion until translucent.
- Add the roasted garlic and cook for another minute.
- Stir in the pumpkin puree and vegetable broth. Bring to a simmer and let it cook for 15-20 minutes.
- Add cream or coconut milk, thyme, salt, and pepper. Blend until smooth with an immersion blender.
