Ingredients

  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  2. In another bowl, mix the milk, pumpkin puree, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup or your favorite toppings.

Notes

Use fresh pumpkin puree for the best flavor; adjust the pumpkin spice to your taste for a stronger or milder flavor.
