- 1 medium pumpkin, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary

Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until translucent.
- Stir in the diced pumpkin and sliced carrots.
- Pour in the vegetable broth and add thyme and rosemary.
- Bring to a boil, then reduce heat and let it simmer for 30 minutes or until the pumpkin is tender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
For a creamier texture, blend part of the stew. You can also add other vegetables like potatoes or bell peppers for extra flavor.
