Description

Ingredients

  • 1 medium pumpkin, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Stir in the diced pumpkin and sliced carrots.
  4. Pour in the vegetable broth and add thyme and rosemary.
  5. Bring to a boil, then reduce heat and let it simmer for 30 minutes or until the pumpkin is tender.
  6. Season with salt and pepper to taste.

Notes
