  • 113 g mascarpone (cold)
  • 1/2 tsp vanilla paste (for frosting)

Instructions

  1. Prepare Your Baking Sheets: Line two baking sheets with parchment paper.
  2. Mix the Dry Ingredients: Sift together the powdered sugar, almond flour, and cocoa powder.
  3. Whip the Egg Whites: In a clean mixing bowl, whip the egg whites until foamy, gradually adding granulated sugar until stiff peaks form.
  4. Add Color and Flavor: Gently fold in the vanilla paste and red food gel into the meringue.
  5. Combine Wet and Dry: Carefully fold the dry ingredients into the meringue in three parts.
  6. Pipe the Macarons: Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
  7. Rest the Macarons: Let the macarons sit at room temperature for 30-60 minutes until they form a dry skin.
