Instructions
- Prepare Your Baking Sheets: Line two baking sheets with parchment paper.
- Mix the Dry Ingredients: Sift together the powdered sugar, almond flour, and cocoa powder.
- Whip the Egg Whites: In a clean mixing bowl, whip the egg whites until foamy, gradually adding granulated sugar until stiff peaks form.
- Add Color and Flavor: Gently fold in the vanilla paste and red food gel into the meringue.
- Combine Wet and Dry: Carefully fold the dry ingredients into the meringue in three parts.
- Pipe the Macarons: Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
- Rest the Macarons: Let the macarons sit at room temperature for 30-60 minutes until they form a dry skin.
- Bake: Preheat your oven to 150°C (300°F) and bake for about 15-18 minutes.
- Cool: Allow the shells to cool completely on the baking sheets.
- For the Mascarpone Frosting: In a chilled bowl, whip the heavy cream until soft peaks form. Combine cold mascarpone, 50 g sugar, and vanilla paste and mix on low speed.
- Fold Together: Gently fold the whipped cream into the mascarpone mixture.
- For Assembly: Pair shells, fill with mascarpone frosting, and chill for at least 30 minutes before serving.
