Ingredients

  • 1 cup sugar (adjust to taste)
  • 4 cups water, divided
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • Ice cubes
  • Fresh lemon slices and rhubarb stalks for garnish (optional)

Instructions

  1. Combine the chopped rhubarb and 2 cups of water in a medium saucepan.
  2. Bring the mixture to a boil over medium heat, then lower the heat and simmer for about 10 minutes.
  3. Strain the rhubarb mixture through a fine-mesh sieve or cheesecloth into a large bowl.
  4. Mix the rhubarb juice with the remaining 2 cups of water, sugar, and lemon juice in a pitcher.
