- 4 cups water, divided
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- Ice cubes
- Fresh lemon slices and rhubarb stalks for garnish (optional)
Instructions
- Combine the chopped rhubarb and 2 cups of water in a medium saucepan.
- Bring the mixture to a boil over medium heat, then lower the heat and simmer for about 10 minutes.
- Strain the rhubarb mixture through a fine-mesh sieve or cheesecloth into a large bowl.
- Mix the rhubarb juice with the remaining 2 cups of water, sugar, and lemon juice in a pitcher.
- Taste and adjust the sweetness or acidity as needed.
- Serve over ice cubes and garnish if desired.
