Description

A comforting dish that combines tender chicken, creamy sauce, and flavorful mushrooms for a delightful meal.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 8 oz (225g) mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups (480ml) chicken broth
  • 1 cup (240ml) sour cream
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Cooked egg noodles or rice, for serving
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken pieces to the skillet and season with salt, pepper, and paprika. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Add the sliced mushrooms and cook for an additional 5 minutes, or until the mushrooms are tender.
  4. Return the cooked chicken to the skillet, stirring it in with the vegetables.
  5. Sprinkle the flour over the mixture and stir well to combine. Gradually pour in the chicken broth while continuously stirring. Bring the mixture to a simmer and let it thicken (about 5 minutes).
  6. Remove the skillet from heat and gently stir in the sour cream until the mixture is creamy and well combined.
  7. Serve the Rich Chicken Stroganoff over cooked egg noodles or rice, and garnish with fresh parsley if desired.

Notes

For best results, cut chicken into even pieces and allow mushrooms to fully cook. Adjust seasoning according to taste.
