- 2 medium beets, peeled and sliced
- 2 medium sweet potatoes, peeled and sliced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 oz feta cheese
- 2 tablespoons Greek yogurt
- 1 teaspoon olive oil
- 1/3 cup dried cranberries
- 1/4 cup toasted walnuts
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the sliced beets and sweet potatoes with olive oil, salt, and black pepper until evenly coated.
- Spread the beets and sweet potatoes in a single layer on a baking sheet.
- Roast in the oven for 25–30 minutes or until fork-tender.
- While the veggies are roasting, prepare the whipped feta. In a food processor, blend the feta cheese, Greek yogurt, and 1 teaspoon of olive oil until smooth and creamy.
- Once the vegetables are done, remove them from the oven and let them cool slightly.
- Arrange the roasted beets and sweet potatoes on a large serving board.
- Dollop the whipped feta onto the board, scattering cranberries and toasted walnuts around for added texture and color.
- Garnish with fresh thyme if desired.
