Ingredients

  • 2 medium beets, peeled and sliced
  • 2 medium sweet potatoes, peeled and sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 oz feta cheese
  • 2 tablespoons Greek yogurt
  • 1 teaspoon olive oil
  • 1/3 cup dried cranberries
  • 1/4 cup toasted walnuts
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the sliced beets and sweet potatoes with olive oil, salt, and black pepper until evenly coated.
  3. Spread the beets and sweet potatoes in a single layer on a baking sheet.
  4. Roast in the oven for 25–30 minutes or until fork-tender.
  5. While the veggies are roasting, prepare the whipped feta. In a food processor, blend the feta cheese, Greek yogurt, and 1 teaspoon of olive oil until smooth and creamy.
  6. Once the vegetables are done, remove them from the oven and let them cool slightly.
  7. Arrange the roasted beets and sweet potatoes on a large serving board.
  8. Dollop the whipped feta onto the board, scattering cranberries and toasted walnuts around for added texture and color.
  9. Garnish with fresh thyme if desired.
  10. Serve and enjoy this beautiful holiday dish!
