Description

A delightful twist on classic brownies featuring roasted cherries that add a bright, jammy contrast to rich chocolate.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup fresh cherries, pitted and halved

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. Melt the butter over low heat in a medium saucepan, then stir in the chocolate chips until smooth.
  3. Combine the melted chocolate mixture with sugar, eggs, and vanilla extract in a mixing bowl. Mix until well combined.
  4. Add flour and salt, stirring until just mixed.
  5. Fold in the cherries gently with a spatula.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs.
  8. Allow to cool before cutting into squares.

Notes

Using room-temperature eggs blends more smoothly. Don’t overmix after adding flour to keep brownies tender. Pat cherries dry if using frozen.
