Description

A simple yet elegant toast featuring creamy whipped ricotta and honey-roasted strawberries, finished with a drizzle of balsamic glaze.


Ingredients

  • 2 cups Fresh strawberries
  • 1 cup Ricotta cheese
  • 2 tablespoons Honey
  • 4 slices Bread (sourdough or whole grain)
  • 2 tablespoons Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • Balsamic glaze (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and hull the strawberries, then place them on a baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Roast in the oven for about 15-20 minutes until they are soft and caramelized.
  3. Combine the ricotta cheese and honey in a bowl, mixing until smooth and creamy. Season with a pinch of salt and black pepper to taste.
  4. Toast the bread slices until golden brown and crisp.
  5. Spread the whipped ricotta on each piece of toast. Top with the roasted strawberries. Drizzle with balsamic glaze if desired.
  6. Serve immediately and enjoy.

Notes

Roasted strawberries can be prepared up to 3 days ahead. Use whole-milk ricotta for creaminess or opt for part-skim for a lighter version.
