- 2 cups Fresh strawberries
- 1 cup Ricotta cheese
- 2 tablespoons Honey
- 4 slices Bread (sourdough or whole grain)
- 2 tablespoons Olive oil
- 1 pinch Salt
- 1 pinch Black pepper
- Balsamic glaze (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and hull the strawberries, then place them on a baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Roast in the oven for about 15-20 minutes until they are soft and caramelized.
- Combine the ricotta cheese and honey in a bowl, mixing until smooth and creamy. Season with a pinch of salt and black pepper to taste.
- Toast the bread slices until golden brown and crisp.
- Spread the whipped ricotta on each piece of toast. Top with the roasted strawberries. Drizzle with balsamic glaze if desired.
- Serve immediately and enjoy.
Notes
Roasted strawberries can be prepared up to 3 days ahead. Use whole-milk ricotta for creaminess or opt for part-skim for a lighter version.
