Ingredients

- 2 slices rustic rye bread
- 1 ripe avocado
- 2 eggs
- Salt to taste
- Pepper to taste
- Cherry tomatoes (for garnish)
- Fresh herbs (optional, for garnish)
Instructions
- Bring a pot of water to a boil. Gently add eggs and boil for 6-7 minutes for soft-boiled. Remove eggs and cool in ice water.
- While the eggs are cooling, toast the rye bread until golden and crispy.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
- Spread the mashed avocado evenly on the toasted rye bread.
- Peel the soft-boiled eggs and carefully slice them in half. Place the egg halves on top of the avocado toast.
- Garnish with halved cherry tomatoes and fresh herbs if desired.
- Serve immediately and enjoy!
