Description

A delicious and healthy meal featuring nutty rye bread, creamy avocado, and soft-boiled eggs, perfect for any time of the day.


Ingredients

Scale
  • 2 slices rustic rye bread
  • 1 ripe avocado
  • 2 eggs
  • Salt to taste
  • Pepper to taste
  • Cherry tomatoes (for garnish)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Bring a pot of water to a boil. Gently add eggs and boil for 6-7 minutes for soft-boiled. Remove eggs and cool in ice water.
  2. While the eggs are cooling, toast the rye bread until golden and crispy.
  3. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
  4. Spread the mashed avocado evenly on the toasted rye bread.
  5. Peel the soft-boiled eggs and carefully slice them in half. Place the egg halves on top of the avocado toast.
  6. Garnish with halved cherry tomatoes and fresh herbs if desired.
  7. Serve immediately and enjoy!
