- 12 oz elbow macaroni or cavatappi pasta
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 4 cups milk
- 2 cups shredded smoked gouda cheese
- 1 cup shredded sharp cheddar cheese
- Salt and pepper to taste
- Breadcrumbs for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente; drain and set aside.
- In a large saucepan, melt butter over medium heat.
- Stir in flour and cook for about 1 minute, whisking constantly.
- Gradually whisk in the milk, cooking until the mixture thickens.
- Remove from heat and stir in the smoked gouda and cheddar cheese until melted and smooth.
- Season with salt and pepper.
- Combine the cheese sauce with the cooked pasta and mix well.
- Pour the mixture into a greased baking dish.
- If desired, sprinkle breadcrumbs on top.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden.
- Let it cool slightly before serving.
Notes
For best results, use high-quality smoked gouda and aged cheddar cheese. Don’t overcook the pasta and whisk constantly for a smooth cheese sauce.
