Description

A decadent twist on a classic comfort food that combines smooth, smoky flavors with creamy cheeses and tender pasta.


Ingredients

  • 12 oz elbow macaroni or cavatappi pasta
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups milk
  • 2 cups shredded smoked gouda cheese
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large saucepan, melt butter over medium heat.
  4. Stir in flour and cook for about 1 minute, whisking constantly.
  5. Gradually whisk in the milk, cooking until the mixture thickens.
  6. Remove from heat and stir in the smoked gouda and cheddar cheese until melted and smooth.
  7. Season with salt and pepper.
  8. Combine the cheese sauce with the cooked pasta and mix well.
  9. Pour the mixture into a greased baking dish.
  10. If desired, sprinkle breadcrumbs on top.
  11. Bake in the preheated oven for 25-30 minutes until bubbly and golden.
  12. Let it cool slightly before serving.

Notes

For best results, use high-quality smoked gouda and aged cheddar cheese. Don’t overcook the pasta and whisk constantly for a smooth cheese sauce.
