Description

A delightful dessert combining rich maple flavors and toasted pecans with a buttery crust.


Ingredients

  • 1 cup salted butter, melted (226 grams)
  • 2 cups + 3 tbsp all-purpose flour, spooned & leveled (284 grams)
  • 1/2 cup light brown sugar, packed (110 grams)
  • 3/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup salted butter (113 grams)
  • 1/2 cup pure maple syrup
  • 1/2 cup light brown sugar, packed (110 grams)
  • 3 tbsp heavy cream, at room temperature (45 grams)
  • 2 large eggs, at room temperature
  • 3 and 1/4 cups pecan halves
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 3/4 tsp cinnamon
  • 1/2 cup cold heavy cream (120 grams)
  • 3 tbsp powdered sugar (or more to taste, 22 grams)
  • 1 tsp vanilla extract
  • Flaky sea salt, for topping
  • Ice cream, optional for serving

Instructions

  1. Preheat the oven to 350℉ (176℃). Prepare a 9×13 inch baking pan with cooking spray and parchment paper.
  2. Make the crust: Melt the butter and mix in remaining crust ingredients until coarse crumbs form. Press into the bottom of the pan and prink with a fork. Bake for 18-20 minutes until lightly golden.
  3. For the filling: Beat the eggs. In a pot, combine melted butter, maple syrup, brown sugar, and heavy cream. Cook over medium heat until combined and then boil for 3 minutes. Remove from heat.
  4. Tempering: Spoon out 1/3 cup of the mixture and drizzle it into the eggs while whisking. Pour this back into the pot and mix in pecans, salt, vanilla, and cinnamon.
  5. Bake: Pour the filling over the crust and bake for 28-34 minutes. The center should jiggle slightly and a toothpick should come out mostly clean.
  6. Whipped Cream: Beat together whipped cream ingredients until stiff peaks form. Serve with bars.
  7. Slice, serve, and store in an airtight container for up to 4 days in the fridge.

Notes

Use high-quality maple syrup and fresh pecans for the best flavor. Let the bars cool completely before slicing for cleaner cuts.
