- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 2 cups kale (optional)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned.
- Add the chopped onion and sauté until translucent.
- Stir in the diced potatoes and chicken broth. Bring to a boil.
- Reduce heat and let simmer until the potatoes are tender.
- Stir in the heavy cream and kale (if using). Season with salt and pepper.
- Cook for an additional 5 minutes until heated through.
