Instructions

  1. Prep the Pan: Set your non-stick skillet over medium heat to warm.
  2. Mix the Batter: Combine flour, milk, eggs, melted butter, and salt in a blender or large bowl until smooth. Let the batter rest for at least 30 minutes.
  3. Grease the Skillet: Lightly grease your skillet with butter or cooking spray.
  4. Cook the Crepes: Pour about 1/4 cup of batter into the pan, tilting to spread. Cook for 1-2 minutes until edges lift, then flip and cook for another minute.
  5. Fill the Crepes: Fill each crepe with scrambled eggs, sautéed spinach, shredded cheese, and diced tomatoes. Fold or roll gently to encase.
  6. Garnish and Serve: Sprinkle with chives and serve warm.
