Ingredients

  • 3 tablespoons chopped fresh chives
  • 1 cup (about 100g or 3.5 oz) shredded cheddar cheese
  • 1/2 cup (8 tbsp; 113g) unsalted butter, frozen
  • 2/3 cup (160ml) cold buttermilk, plus 1 tablespoon for brushing
  • 1 large egg, separated
  • 3/4 cup (about 110g or 3 oz) finely chopped ham
  • Optional for topping: flaky sea salt

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, garlic powder, salt, and black pepper. Stir in the chopped chives and shredded cheddar cheese.
  2. Add butter: Grate the frozen butter and add it to the mixture, combining until achieving a crumbly texture.
  3. Prepare wet ingredients: In a separate bowl, whisk together the buttermilk and egg yolk.
  4. Combine mixtures: Pour the wet mixture over the dry ingredients, folding in the finely chopped ham until the dough clumps together.
  5. Shape dough: Turn the dough onto a floured surface and bring it into a ball, pressing it into an 8-inch disc.
  6. Cut scones: Cut the disc into 8 wedges or use drop scone method for smaller portions.
  7. Prepare for baking: Brush tops with a mixture of reserved egg white and buttermilk, and sprinkle with flaky sea salt.
  8. Chill dough: Refrigerate for at least 15 minutes.
  9. Bake scones: Bake at 400°F (204°C) for 22-25 minutes until golden brown.
  10. Cool and serve: Let cool on baking sheets before transferring to a wire rack.
