Ingredients

  • 3 large eggs
  • 2 cups whole milk
  • ¼ cup water
  • 3 tablespoons unsalted butter, melted

  • 2 cloves garlic, minced
  • 1 medium shallot, finely chopped
  • 10 ounces fresh spinach
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of nutmeg
  • 4 ounces cream cheese, softened
  • 1 cup shredded Gruyère cheese
  • ½ cup shredded Mozzarella cheese

Instructions

  1. Whisk together the flour, salt, and black pepper in a large mixing bowl.
  2. Crack the eggs into the well of dry ingredients. Pour in milk and water.
  3. Begin whisking from the center to incorporate flour until smooth.
  4. Gently whisk in melted butter until combined.
  5. Cover the bowl and let the batter rest in the refrigerator for at least one hour.
  6. Heat olive oil in a skillet and sauté shallots until soft.
  7. Add minced garlic and cook until fragrant.
  8. Add fresh spinach and stir until wilted.
  9. Transfer the spinach to a colander to remove excess water.
  10. Mix drained spinach with cream cheese, Gruyère, Mozzarella, salt, pepper, and nutmeg.
  11. Heat a skillet over medium heat and pour ¼ cup of crepe batter in the center.
  12. Cook each side for 1-2 minutes until lightly golden.
  13. Assemble by filling each crepe, folding it over, and pressing to seal.
  14. Serve warm with fresh herbs or salad if desired.
