- 1 pound tortellini (fresh or frozen)
- 2 cups broccoli florets
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the tortellini, broccoli, and cherry tomatoes on a large sheet pan.
- Drizzle with olive oil and sprinkle garlic powder, Italian seasoning, salt, and pepper. Toss to coat.
- Bake in the preheated oven for 15-20 minutes, until the vegetables are tender.
- Remove from the oven, sprinkle with mozzarella and Parmesan cheese, and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
