Ingredients

  • 1 pound tortellini (fresh or frozen)
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the tortellini, broccoli, and cherry tomatoes on a large sheet pan.
  3. Drizzle with olive oil and sprinkle garlic powder, Italian seasoning, salt, and pepper. Toss to coat.
  4. Bake in the preheated oven for 15-20 minutes, until the vegetables are tender.
  5. Remove from the oven, sprinkle with mozzarella and Parmesan cheese, and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
