- 4 chicken breasts
- 2 cups mixed vegetables (e.g., broccoli, bell peppers, carrots)
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Melt the butter in a small saucepan over medium heat and add the minced garlic, paprika, salt, and pepper.
- Arrange the chicken breasts on a large baking sheet and drizzle with olive oil and half of the garlic butter mixture.
- Add the mixed vegetables around the chicken and drizzle with the remaining garlic butter.
- Bake for 25-30 minutes, until the chicken is cooked through and the veggies are tender.
- Garnish with fresh parsley before serving.
