Ingredients

- Potatoes (Yukon Gold or Red Potatoes)

- Onion powder
- Paprika

- Black pepper

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
- Arrange the seasoned potatoes on a sheet pan.
- Season the pork chops with salt and pepper, and place them on the sheet pan with the potatoes.
- Roast in the preheated oven for 25-30 minutes, or until the pork is cooked through and the potatoes are crispy and golden.
- Optionally, sprinkle fresh herbs over the dish before serving.
Notes
Cut potatoes into even pieces for even cooking. Use a meat thermometer to ensure pork chops reach 145°F (63°C).
