- 2 medium sweet potatoes, peeled and cubed (1/2-inch)
- 2 cups broccoli florets (1/2-inch)
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce (or coconut aminos)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Add the sliced sausage, cubed sweet potatoes, and broccoli florets to the sheet pan, spreading them out in a single layer.
- In a small saucepan, melt the butter (or heat olive oil) over medium heat. Add the minced garlic and sauté for 30-60 seconds until fragrant.
- Stir in the honey, soy sauce, apple cider vinegar, and season with salt and pepper. Let the sauce simmer for 2-3 minutes.
- Pour the honey garlic sauce over the sausage and vegetables, tossing to coat evenly.
- Roast in the oven for 25-30 minutes, stirring halfway through until the sweet potatoes are tender and caramelized.
- Sprinkle with fresh parsley and serve warm.
