Description

A comforting one-pan dish combining smoked sausage, tortellini, and vibrant vegetables, all roasted together for a quick and satisfying meal.


Ingredients

  • 12 oz fresh or frozen cheese-filled tortellini
  • 12 oz pre-cooked smoked sausage, sliced into bite-sized rounds
  • 2 medium bell peppers, cut into strips
  • 1 medium red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the smoked sausage into bite-sized rounds and chop the bell peppers into strips.
  3. Thinly slice the red onion and halve the cherry tomatoes.
  4. On a large rimmed sheet pan, spread out the sausage, bell peppers, red onion, and cherry tomatoes.
  5. Drizzle with olive oil, then sprinkle Italian seasoning, garlic powder, salt, and black pepper evenly over the top.
  6. Toss gently to coat all ingredients for even roasting.
  7. Place the sheet pan in the preheated oven and roast for 15 minutes.
  8. Remove the pan and scatter the cheese tortellini among the sausage and vegetables.
  9. Drizzle a little more olive oil and toss gently to combine.
  10. Return the pan to the oven and roast for another 10-12 minutes until the tortellini is browned in spots and tender.
  11. Once cooked, let it cool for a few minutes before serving.

Chop vegetables in advance to save time. Substitute vegetables based on availability.
