- 12 oz fresh or frozen cheese-filled tortellini
- 12 oz pre-cooked smoked sausage, sliced into bite-sized rounds
- 2 medium bell peppers, cut into strips
- 1 medium red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the smoked sausage into bite-sized rounds and chop the bell peppers into strips.
- Thinly slice the red onion and halve the cherry tomatoes.
- On a large rimmed sheet pan, spread out the sausage, bell peppers, red onion, and cherry tomatoes.
- Drizzle with olive oil, then sprinkle Italian seasoning, garlic powder, salt, and black pepper evenly over the top.
- Toss gently to coat all ingredients for even roasting.
- Place the sheet pan in the preheated oven and roast for 15 minutes.
- Remove the pan and scatter the cheese tortellini among the sausage and vegetables.
- Drizzle a little more olive oil and toss gently to combine.
- Return the pan to the oven and roast for another 10-12 minutes until the tortellini is browned in spots and tender.
- Once cooked, let it cool for a few minutes before serving.
