- 1 pound boneless, skinless chicken thighs
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for cooking
- Optional toppings: sour cream, avocado, cilantro
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic; sauté until softened.
- Add the chicken thighs to the pot and brown on both sides.
- Stir in the white beans, green chilies, chicken broth, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 20–25 minutes, or until chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Serve hot, garnished with optional toppings.
Notes
For keto-friendly options, substitute white beans with riced cauliflower or extra shredded chicken. Store in the fridge for up to 4 days or freeze for up to 3 months.
