Ingredients

  • 2 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • Food coloring gel or natural, optional

Instructions

  1. In a large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy (3-5 minutes).
  2. Beat in the eggs one at a time, then add vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  5. Divide the dough in half, adding food coloring if desired.
  6. Shape each half into a log, wrap in plastic wrap, and chill for at least 3 hours or overnight.
  7. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  8. Slice chilled logs into 1/4 inch rounds and place on prepared sheets.
  9. Bake for 8-11 minutes, or until edges are golden.
  10. Let cool for 5 minutes before transferring to a wire rack.

Notes

Make sure the butter is softened to room temperature for easy mixing. Chill the dough thoroughly to maintain cookie shape.
