Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 2 large onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 tablespoon paprika
  • 1 teaspoon dried marjoram
  • Salt and pepper to taste
  • 2 carrots, sliced (optional)
  • 1 bell pepper, chopped (optional)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Add beef cubes and sear until browned on all sides. Remove beef and set aside.
  2. In the same skillet, add chopped onions and cook until translucent. Stir in minced garlic and cook for an additional minute.
  3. Incorporate tomato paste into the onion and garlic mixture. Cook for about two minutes, then transfer this mixture to a slow cooker.
  4. Add seared beef back into the slow cooker. Pour in beef broth and stir in paprika, marjoram, salt, and pepper.
  5. If desired, add sliced carrots and chopped bell pepper to enhance flavor and nutrition.
  6. Cover the slow cooker and set to cook on low for 6 to 8 hours, or until the beef is tender and easily shreds.
  7. Serve warm goulash with crusty bread or over egg noodles.

Notes

Brown the beef well for a richer taste. Use fresh spices for the best flavor. Adjust seasoning according to taste.
