Description

Ingredients

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups egg noodles
  • 2 cups frozen peas and carrots
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, combine the diced beef, chopped onion, minced garlic, beef broth, Worcestershire sauce, dried thyme, salt, and black pepper.
  2. Cover the slow cooker and cook on low for 360 minutes or on high for 240 minutes, until the beef is tender.
  3. About 30 minutes before serving, stir in the egg noodles and frozen peas and carrots.
  4. Cook until the noodles are tender.
  5. Serve hot, garnished with fresh parsley.

Notes

Choose beef chuck roast for tenderness; adjust seasonings to taste; for thicker sauce, add cornstarch slurry before serving.
