- 2 pounds beef roast (chuck or round)
- 1 medium onion, sliced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 6 slices bread (white or Texas toast)
- 4 cups mashed potatoes (homemade or prepared)
Instructions
- Trim excess fat from the beef roast, then season with salt and black pepper.
- Layer the sliced onions in the slow cooker, then place the seasoned beef roast on top.
- In a bowl, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and dried thyme. Pour this mixture over the beef.
- Cover and cook on low for 8 hours or high for 4-5 hours until beef is tender.
- Remove the beef and shred it on a cutting board.
- To prepare gravy, take out a cup of cooking liquid, mix cornstarch with cold water to create a slurry, and stir into the cooking liquid in a saucepan over medium heat until thickened.
- Slice bread and prepare mashed potatoes.
- Serve shredded beef over bread, smother with gravy, and add mashed potatoes on the side.
Notes
For best flavor, use a fatty cut of meat like chuck roast. Consider adding vegetables like carrots for added nutrition.
