Description

Ingredients

  • 2 pounds beef roast (chuck or round)
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 6 slices bread (white or Texas toast)
  • 4 cups mashed potatoes (homemade or prepared)

Instructions

  1. Trim excess fat from the beef roast, then season with salt and black pepper.
  2. Layer the sliced onions in the slow cooker, then place the seasoned beef roast on top.
  3. In a bowl, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and dried thyme. Pour this mixture over the beef.
  4. Cover and cook on low for 8 hours or high for 4-5 hours until beef is tender.
  5. Remove the beef and shred it on a cutting board.
  6. To prepare gravy, take out a cup of cooking liquid, mix cornstarch with cold water to create a slurry, and stir into the cooking liquid in a saucepan over medium heat until thickened.
  7. Slice bread and prepare mashed potatoes.
  8. Serve shredded beef over bread, smother with gravy, and add mashed potatoes on the side.

Notes

For best flavor, use a fatty cut of meat like chuck roast. Consider adding vegetables like carrots for added nutrition.
