Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups egg noodles
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the chicken broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper.
  3. Cover and cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours).
  4. About 30 minutes before serving, remove the chicken and shred it with two forks. Return the chicken to the slow cooker and add the egg noodles and frozen peas.
  5. Cook for an additional 30 minutes on high until the noodles are tender.
  6. Remove the bay leaf and garnish with fresh parsley before serving.

Notes

For extra flavor, use homemade chicken broth. You can add other vegetables like corn or spinach. For a creamy version, add half a cup of heavy cream or milk about 10 minutes before serving.
