- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 cups egg noodles
- 1 cup frozen peas
- Fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts in the slow cooker.
- Add the chicken broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours).
- About 30 minutes before serving, remove the chicken and shred it with two forks. Return the chicken to the slow cooker and add the egg noodles and frozen peas.
- Cook for an additional 30 minutes on high until the noodles are tender.
- Remove the bay leaf and garnish with fresh parsley before serving.
Notes
For extra flavor, use homemade chicken broth. You can add other vegetables like corn or spinach. For a creamy version, add half a cup of heavy cream or milk about 10 minutes before serving.
